Summer Meal Plan: Cool Meals for Hot Days

It's only the middle of June and we've already hit 90 degree weather here in Tennessee! While I love sunshine and warm weather, I do not like a hot house. In fact, earlier this week I turned the oven on in the afternoon to fix a roast and could not cool down until I took a cold bath later that night! That's when I decided to create a Summer Meal Plan. My Summer Meal Plan consists of recipes that do not require the use of the oven. Instead, I'm opting to use my crockpot, Instant Pot, … [Read more...]

31 Dinner Ideas for the Month of May

I love to cook. If you know my mom, then you wouldn't be at all surprised. She is a masterful chef who my husband lovingly refers to as "the MacGyver of the Kitchen" because she can take 3 seemingly unrelated foods and turn them into a gastronomical masterpiece. I don't have her creative knack for cooking but I'm trying. Unfortunately, my children would prefer burgers and chicken tenders over Avocado Black Bean Enchiladas (yum btw!) or Chicken Alfredo Spaghetti Squash (not so yum). While … [Read more...]

Weekly Meal Plan for May 17-23

This week my husband and I celebrate 8 years of marriage. If you're curious as to how we met, you can read our story. It's been a blur, honestly. Having 4 kids in 8 years will do that to you. But it's been a soul-satisfying blur: we've grown individually and together in many ways, and I'm looking forward to the next year together. Also this week, our oldest daughter finishes up her second year of American Heritage Girls. We still have a few more weeks of school here so I'm trying to have … [Read more...]

Weekly Meal Plan for 5/3-9

This week we're celebrating my third daughter's THIRD birthday on Monday and having a family party on Saturday. On Wednesday, we have our last CBS class, culminating with our Children's Program -- always a hit! On Thursday, my big girls will be attending an enrichment program where they will learn about Trees. On Saturday, our church is hosting a Mother's Appreciation Breakfast, and don't forget Mother's Day is May 10th! Here's Annabeth and her sisters on her second birthday. Monkey cake, … [Read more...]

Weekly Meal Plan for December 14-20 {Gluten-Free, Wk 8}

It's been a little quiet on the blog this month. We've been cracking the whip with school and, well, the holidays are upon us and there's so much to do! I have been meditating on and praying over some verses lately about rest. Appropriate, don't you think? This week I'll share those verses and some of my thoughts on them with you in a handy-dandy printable, so be sure to check back :) We have a lot going on this week so all of our meals are simple. No complex recipes here! Here's what's on … [Read more...]

Weekly Meal Plan for 11/23-29 {Gluten-Free, Wk 6}

It's Thanksgiving week! That means a short meal plan again as we'll be traveling to visit with family 3 days this week. Some day I would like to host Thanksgiving dinner at my house, but for now we're making the rounds. If you have children, you know how challenging the holidays can be: lots of time in the car, excess energy, too much sugar, no naps. Yeah, it's not a winning combination. But I was reminded recently that this time of year isn't about me. So, I'm going to try my hardest to relax … [Read more...]

Weekly Meal Plan for 11/2-8 {Gluten-Free, Wk3}

We have an action-packed week ahead with American Heritage Girls tonight, voting tomorrow, Community Bible Study on Wednesday, and family pictures on Friday. I'm so glad to have a meal plan that I did not have to create! Sometimes you just need a little assistance, and since I have just started a gluten-free diet, I need some new recipes. This week, once again, I'm primarily following the weekly meal plan from Deliciously Organic. If you preorder Carrie's new cookbook The Grain-Free Table: … [Read more...]

Weekly Meal Plan for 10/26-11/1 {Gluten-Free, Week2}

It's been quiet on the blog this week. I apologize for falling off the #write31days bandwagon. Life with my newborn alone would not be so tough, but adding in three other children + homeschooling + other responsibilities has left me little time to write. I'll try to add a few more posts in the coming weeks. If there's something you'd like me to talk about, shoot me an email {growinginhisglory at gmail dot com}. This will be Week 2 of my gluten-free diet. So far so good. I have not cheated … [Read more...]

7/27/14 Weekly Meal Plan & Goals

My parents have blessed Daniel and me with a "children-free weekend"! So what am I doing? Catching up on laundry, grocery shopping for the week, and cleaning out the car. I even vacuumed out the window sills in our house. Yuck! Do you air out your home periodically? I've been reading Charlotte Mason's Home Education (aff link), and she recommends opening your windows just about an inch every so often to draw out the noxious air and pull in fresh air. For some reason, I've felt very stuffy in … [Read more...]

6/22/14 Weekly Meal Plan

Vacation Bible School begins this week at our church, which means from Sunday to Wednesday, our family has the opportunity to eat two dinners: dinner at home before church (because we usually eat around 6:00), followed by a late second dinner after VBS. Our church is great about feeding its members :) I've also been blessed with an "abundance" of energy the past few days, which I'm hoping stays so I can make some freezer meals. With a little more than 2 months before our baby girl arrives, I … [Read more...]
