Weekly Meal Plan for 1/11/15 {Gluten-Free, Wk 10} + More

I'm a little late with the meal plan, but here it is! I still can't believe this is my 10th week gluten-free. {If you're interested in why I decided to go gluten-free, read this post.} While I probably need to write another post to explain it, I'm about to start a new "diet," not to lose weight, but to rectify some health problems I've been having and figure out what foods I'm not tolerating too well. Unfortunately, just eliminating gluten has not resolved all my problems. I'm still doing my … [Read more...]

Weekly Meal Plan for 1/4/15 {Gluten-Free, Wk 9} + More

This post contains affiliate links. Thanks for supporting my site.  Well, it's the first full week of January, and while it's been a pretty restful time, now we're hitting the January rush. We get back into full swing this week with American Heritage Girls on Monday and CBS (Community Bible Study) on Wednesday. Daniel goes back to a full week of work, and we'll start back a full week of school. So, I'm resurrecting the weekly meal plan :) Yesterday, I posted my "New Habits to Grow in … [Read more...]

Weekly Meal Plan for December 14-20 {Gluten-Free, Wk 8}

It's been a little quiet on the blog this month. We've been cracking the whip with school and, well, the holidays are upon us and there's so much to do! I have been meditating on and praying over some verses lately about rest. Appropriate, don't you think? This week I'll share those verses and some of my thoughts on them with you in a handy-dandy printable, so be sure to check back :) We have a lot going on this week so all of our meals are simple. No complex recipes here! Here's what's on … [Read more...]

Weekly Meal Plan for 11/23-29 {Gluten-Free, Wk 6}

It's Thanksgiving week! That means a short meal plan again as we'll be traveling to visit with family 3 days this week. Some day I would like to host Thanksgiving dinner at my house, but for now we're making the rounds. If you have children, you know how challenging the holidays can be: lots of time in the car, excess energy, too much sugar, no naps. Yeah, it's not a winning combination. But I was reminded recently that this time of year isn't about me. So, I'm going to try my hardest to relax … [Read more...]

Weekly Meal Plan for 11/9-15 {Gluten Free, Wk4}

This week my husband leaves for a hunting trip with my Dad and brother, so the girls and I will be spending some time with my Mom. That means a short school week and a short meal plan. My Mom is the best cook I know, so I will be taking advantage of her culinary skills. If you're a mom, then you know what a blessing that is! I've been reading the book Trim Healthy Mama (aff), and as a result, we're cutting back on carbohydrate-laden foods like pastas and rice. Even though there are … [Read more...]

Weekly Meal Plan for 11/2-8 {Gluten-Free, Wk3}

We have an action-packed week ahead with American Heritage Girls tonight, voting tomorrow, Community Bible Study on Wednesday, and family pictures on Friday. I'm so glad to have a meal plan that I did not have to create! Sometimes you just need a little assistance, and since I have just started a gluten-free diet, I need some new recipes. This week, once again, I'm primarily following the weekly meal plan from Deliciously Organic. If you preorder Carrie's new cookbook The Grain-Free Table: … [Read more...]

Why I’m Going Gluten-Free

I mentioned recently that I'm going gluten-free for health reasons. In this post, I share my reasons for pursuing a gluten-free diet and what I hope to achieve by it. Back in 2008 when I was pregnant for the first time, my obstetrician informed me that my thyroid levels were off and that I needed to see an endocrinologist immediately as the baby could be adversely affected unless I got my hormone levels under control. At the time I was a doctoral student/graduate assistant and life was … [Read more...]

Weekly Meal Plan for 10/26-11/1 {Gluten-Free, Week2}

It's been quiet on the blog this week. I apologize for falling off the #write31days bandwagon. Life with my newborn alone would not be so tough, but adding in three other children + homeschooling + other responsibilities has left me little time to write. I'll try to add a few more posts in the coming weeks. If there's something you'd like me to talk about, shoot me an email {growinginhisglory at gmail dot com}. This will be Week 2 of my gluten-free diet. So far so good. I have not cheated … [Read more...]
