Weekly Meal Plan for May 31 – June 6

I skipped posting my meal plan last week because we were out of town enjoying some family time at my parents' cabin. Life is slowing down as summer approaches, and as we break from activities for a few months, I'm realizing how much I need margin in my life. I'm tired. There are a lot of really good things I'm doing, but they've all worn me out. We will officially finish our school year on June 10, and I'm looking forward to a little break and a lighter load through the summer. So, in an … [Read more...]

Weekly Meal Plan for May 17-23

This week my husband and I celebrate 8 years of marriage. If you're curious as to how we met, you can read our story. It's been a blur, honestly. Having 4 kids in 8 years will do that to you. But it's been a soul-satisfying blur: we've grown individually and together in many ways, and I'm looking forward to the next year together. Also this week, our oldest daughter finishes up her second year of American Heritage Girls. We still have a few more weeks of school here so I'm trying to have … [Read more...]

Weekly Meal Plan for 5/10-16

Happy Mother's Day! I hope you were able to celebrate with your loved ones this weekend. God has so richly blessed me with an amazing mother plus 4 little darlings of my own. (Yes, the dog has a dress on. It's the baby's.) Whew! This past week we celebrated Annabeth's third birthday, culminating with a family party yesterday afternoon. The birthday girl seemed to enjoy herself :) Here she is with her "Monkey Cake" -- courtesy of her grandparents who are quite adept cake makers and … [Read more...]

Weekly Meal Plan for 5/3-9

This week we're celebrating my third daughter's THIRD birthday on Monday and having a family party on Saturday. On Wednesday, we have our last CBS class, culminating with our Children's Program -- always a hit! On Thursday, my big girls will be attending an enrichment program where they will learn about Trees. On Saturday, our church is hosting a Mother's Appreciation Breakfast, and don't forget Mother's Day is May 10th! Here's Annabeth and her sisters on her second birthday. Monkey cake, … [Read more...]

Weekly Meal Plan for 4/26-5/2

Wow! Can you believe April is already over?! That means it's garden planting time here in Tennessee. We've planted lettuce, spinach, and broccoli but I don't feel very enthused about planting anything else right now. Gardening is not my favorite activity, and since we're very close to putting our house on the market, it seems like one more chore on my to-do list. However, I do love fresh tomatoes, peppers, zucchini, and cucumbers, so I guess I need to suck it up and get to work. We do have … [Read more...]

Weekly Meal Plan for 4/19-25

So, last week I announced that we were doing another Whole30, and, well, my husband and I came to the conclusion that it'll be a Whole7 :) I am burned out. Seriously, I feel like I have so many self-imposed dietary limitations that I don't need any more right now. I just need to eat. And watch my sugar intake...and limit dairy...and lay off the carbs with high glycemic load (i.e. potatoes). You get my drift. So, instead of continuing the Whole30 this week, we're moving back to our regular ol' … [Read more...]

Weekly Meal Plan for 4/5-11

This week we are back in the swing of things around here! Back to American Heritage Girls, back to gymnastics, the Y, Community Bible Study, and back to a more rigid school day. Last week I was pretty lax, but we focused on important topics like the crucifixion and resurrection of Christ, and we went on an educational field trip to the TN Aquarium with our cousins. So we did continue learning, but I don't want to lose momentum when the school year is almost over! I'm hearing, "I think I can, I … [Read more...]

Weekly Meal Plan for 3/29-4/4

April is already upon us! This week we're slowing down in our school work to take a much-needed Spring break. No Community Bible Study this week means we're going to Chattanooga to visit my parents and take a field trip to the Tennessee Aquarium. On Friday, we will celebrates my husband's birthday. We're going out to eat, but I'm planning to make these for his dessert. Next week we're considering another Whole30 to get back on track. But I'd like to get some meals made for the freezer first, so … [Read more...]

Weekly Meal Plan for 3/22-28

Last week is a blur. On Monday, we attended the funeral of Daniel's grandfather and raced back to get Kate to American Heritage Girls that night. Tuesday was catch up day from all we missed on Monday plus gymnastics. Wednesday was CBS and Thursday the girls went down to spend the night with their grandparents. On Friday, my friend Sarah and I went up to Nashville to curriculum shop at the Teach Them Diligently conference. So today, I'm meal planning, school planning, and working in the … [Read more...]

Weekly Meal Plan for March 15-21 {Grain & Gluten-Free}

Two weeks after finishing our Whole30, I have introduced a little dairy back into my diet with little success. I find that when I eat a lot it causes tummy aches and other not-so-pleasant digestive issues. So no dairy for me and only a little for the family because most of the girls and my husband also appear to have problems with dairy. I've also been reading this amazing book on autoimmune diseases and how to reverse them. If you have an autoimmune disease, you MUST read this … [Read more...]
