Gluten-Free Meal Plan for the Week of February 28

It’s been quite a while since I last posted our weekly meals on here, but meal planning is essential to my sanity. I hate waiting until the last minute to decide what to fix. Spontaneity is NOT my thing. But when I have a plan, I’m more relaxed, we eat healthier, and we save money. So taking 20 minutes every Friday to plan our week’s meals is a no-brainer for me.

Here is our gluten-free meal plan for the week. {FYI: I prepare all of our meals sans gluten, so even if I post a recipe containing wheat (flour, pasta, etc.), I use a GF substitute.}

Our Gluten-Free Meal Plan for the Week:

Sunday

Leftovers :: I don’t like to waste food, so Sundays are when we clean out the fridge.

Monday

Creamy One-Pot Mac & Cheese

Sloppy Joes, One-Pot Mac & Cheese, & Roasted Broccoli 

Our family actually enjoys all 3 recipes.

Tuesday

Easy Burrito Bowls

Wednesday

White Bean & Ham Soup

White Bean & Ham Soup with GF Cornbread Muffins

I haven’t made either of these recipes, so we shall see…

Thursday

Sunday Night Stew

Sunday Night Stew with Mashed Potatoes & green beans

This is my standby mashed potato recipe — so creamy & delicious! I’ve heard excellent things about the Pioneer Woman’s stew recipe, so I’m looking forward to trying it out!

Friday

Tacos

Easy Oven Baked Spicy Chicken Tacos

New recipe — I’m not sure if my kids will eat tacos but we’re going to try it!

Saturday

Oven Baked Sweet Potato Fries

Low-Carb Burgers on the grill with Oven Baked Sweet Potato Fries

Both recipes are good. Grilling makes everything better!
