Weekly Meal Plan for June 21-27

Today is Father’s Day, and I just need a minute to offer my thankfulness. God has blessed me with a father who loves Him and daily pursues His will. Through service to others, through wise words and Godly counsel, through generosity and love, in so many ways, my dad is a living example of my heavenly Father.

God has also blessed me with an amazing husband who has grown leaps and bounds over the years into a man much like my father. He is gentle, loving, selfless, generous with his time and money, and his family — especially his girls — always comes first. I look forward to seeing how God continues to work in his life.

Moving on . . .

This week we will officially begin our Summer of Learning albeit on a very relaxed scale. The past week without school work has been so restful and much needed. Not having to plan our weekly lessons is such a relief to me, and I know Kate has enjoyed the break from math facts and handwriting.

My plan for the summer involves lots of reading: We’re taking this challenge in order to expose the girls to more genres and expand our reading selection. The prize for completion: a trip to Sweet CeCe’s for frozen yogurt. We are well on our way already!

On the blog this week I’ll be sharing the many lessons I’ve learned in this our second year of homeschooling. I’m also hoping to finish a round-up of healthy, cool summer treats for the family.

Sunday — Father’s Day!

Easy Glazed Brown Sugar & Dijon Pork Loin with Pioneer Woman’s Creamy Mashed Potatoes {not dairy-free but divine} and green beans

Monday

Restaurant-Style Refried Beans in the crock pot — Tonight’s dinner will be a snacky one. Everyone can choose how to serve their: on flour tortillas, nacho chips, or as a dip. I think I will make this Seven-Layer Dip for Daniel and me. {We have not been eating many beans lately so I’m curious to see how we feel after eating these. I kinda have a feeling I know how we’ll react 🙂 but I’m missing beans.}
