Growing in His Glory: Weekly Meal Plans

Last week is a blur. On Monday, we attended the funeral of Daniel’s grandfather and raced back to get Kate to American Heritage Girls that night. Tuesday was catch up day from all we missed on Monday plus gymnastics. Wednesday was CBS and Thursday the girls went down to spend the night with their grandparents. On Friday, my friend Sarah and I went up to Nashville to curriculum shop at the Teach Them Diligently conference.

So today, I’m meal planning, school planning, and working in the garden with the girls. We bought lettuce, broccoli, spinach, basil, and cilantro to plant plus flower seeds. We’re all very eager to get out and plant in our garden this afternoon.


This week is a little quieter around here, so we’re going to tackle a few decluttering projects and do some spring cleaning. Our meals this week are still primarily grain-free, gluten-free, and dairy-free with some exceptions.

Here’s what’s on our weekly meal plan:


Garlic Oven Roasted Chicken (recipe from this book) with Asparagus Delight (YUM!) and roasted sweet potatoes


Spaghetti Squash Taco Casserole with lettuce, tomatoes, and guacamole


Crockpot Meatballs (I’ve made this recipe, and we LOVE it!) with Oven Roasted Cauliflower Rice and green beans


Primal Pepperoni Pizza Casserole with salad (I’m hoping this recipe will give me my pizza fix.)


Fish Sticks (A family favorite using cod) with Homemade Tartar Sauce and Roasted Broccoli & Carrots


We’re back to pizza this week after our Breakfast-for-Supper hiatus. Perhaps we’ll alternate pizza and breakfast for Fridays 🙂

Pepperoni Pizza for the girls & Daniel, Cauliflower Crust Pizza for moi (I really like this pizza crust considering it’s made of cauliflower, but it’s a little time-consuming.)
