Weekly Meal Plan for December 14-20 {Gluten-Free, Wk 8}

It’s been a little quiet on the blog this month. We’ve been cracking the whip with school and, well, the holidays are upon us and there’s so much to do! I have been meditating on and praying over some verses lately about rest. Appropriate, don’t you think? This week I’ll share those verses and some of my thoughts on them with you in a handy-dandy printable, so be sure to check back 🙂

We have a lot going on this week so all of our meals are simple. No complex recipes here!
Weekly Meal Plan

Here’s what’s on our meal plan this week:


Leftovers — We have a LOT of food in our refrigerator, so we’re cleaning it out today.


Sweet Potato, Black Bean, & Kale Quesadillas (corn tortillas for me) + tomatoes, lettuce, sour cream, salsa, & avocado


Slow Cooker Roasted Chicken + roasted potatoes, carrots, & onions + salad


Fish Taco Bowls with guacamole +tomatoes + lettuce +rice + black beans + cheese + sour cream


Fried Pork Chops (This recipe is good. I use gluten-free flour in place of all-purpose.) + hash brown casserole (freezer) +green beans


Pizza w/ this gluten-free crust (I tried it once before and it didn’t work, so I’m going to try it again because it was highly recommended.) + our favorite pizza sauce

    • JES, I think it had something to do with my flour mix. The dough was very wet. I’ve made a new flour blend so we’ll see if that helps!
