Weekly Meal Plan for 10/26-11/1 {Gluten-Free, Week2}

It’s been quiet on the blog this week. I apologize for falling off the #write31days bandwagon. Life with myย newborn alone would not be so tough, but adding in three other children + homeschooling + other responsibilities has left me little time to write. I’ll try to add a few more posts in the coming weeks. If there’s something you’d like me to talk about, shoot me an email {growinginhisglory at gmail dot com}.

Weekly Meal Plan

This will be Week 2 of my gluten-free diet. So far so good. I have not cheated although the temptations have been there for sure. I’m discovering that the hardest part of this diet is finding good snack foods and having G-F desserts. I’m a sweets eater, so I NEEED my treats ๐Ÿ™‚ This brownie recipe ROCKS!

I don’t know if it’s the fact that I’m exercising once again or the diet but I’ve felt more energized this past week. Trust me; it’s not due to more sleep because I’m still up with Abs at night. That’s okay though. She’s worth it.

This week my oldest daughter Kate turns 6! I can’t believe it! She is so tall and beautiful, intellectual and helpful. I’m so proud of the young lady she’s becoming ๐Ÿ™‚

Monday

Beef Enchiladas with Homemade Red Sauce

Tuesday {Kate’s Birthday!!}

Steak & Shake, per the birthday girl’s request ๐Ÿ™‚

Wednesday

Pinto Beans w/ fried squash & Cornbread Bake

Thursday

Nantucket Baked Cod (like Red Lobster’s), green beans, & Easy Rice Pilaf w/ carrots

Friday

Pizza night!! {Still hunting for a good G-F crust option}

Saturday

Fish Fry/Birthday Party for my Mema
