Weekly Meal Plan

I know I’ve been a little erratic with posting our weekly menu. The weekends are so full now that we’ve resumed homeschooling, so Saturdays have become a planning day for me. I plan our meals, activities & appointments for the week, and all of our school work.

This coming week is a nice slow one compared with the past two in which we had swimming lessons every afternoon. The only plans are a visit from my parents early in the week and a visit we’ll be making with a friend who just had a sweet baby girl last Sunday.


The garden has been in full production mode. We canned 2 quarts and 11 pints of tomatoes this past week. Plus, I have a fridge full of cucumbers that I’m hoping to make into sweet pickle relish this weekend while the hubs is here. We also have lots of corn that we need to put up, and we should have a lot of watermelon real soon too. So thankful for an abundant garden this year!

Here’s what’s on our menu this week:


B: Scrambled eggs, yogurt, & fruit

L: Leftovers

D: Chicken Caesar Pasta Salad w/ Garlic French Bread


B: Oatmeal with frozen blueberries

L: Pizza bagels (This super easy recipe is from my friend Jen. The kids will devour them!) with fruit

Cut mini bagels in half. Let child put pizza sauce, cheese, and any other ingredients on top. We like pepperoni, mushrooms, chopped tomatoes, and bell peppers. Broil 2-3 minutes.

D: Crispy Fish Tacos with Easy Guacamole {This meal idea was my oldest daughter’s; she could eat fish tacos every day.}


B: Cereal with fruit

L: Grilled cheese with carrots & apple slices

D: Baked Spaghetti with green beans


B: Fried eggs with yogurt and fruit

L: Leftover spaghetti

D: Pinto Beans with Broccoli Mac & Cheese


B: Oatmeal with frozen berries

L: Cheese quesadillas with fruit

D: (One Pot) Creamy Chicken & Rice with steamed edamame


B: Cinnamon toast with scrambled eggs and fruit

L: Bean Tostadas {Kids can customize with their own ingredients.}

D: “Green” Pizza


B: Overnight French Toast Casserole with bacon & fruit

L: Sandwiches and chips

D: Dinner out

Some Goals for This Week

{I really like how Deanna of From This Kitchen Table includes weekly goals with her menu plan, so I’m stealing this idea from her :)}

  • Make a list of baby needs
  • Start rereading Baby Wise
  • Make batch of Pizza Roll-Ups & double batch of Spicy Pumpkin Muffins (from this cookbook although I use an older edition)
  • Write blog posts
  • Draft two guest posts (one due 7/25 for this *new* blog, coming soon!)
  • Do more research on how to implement aspects of our homeschool curriculum using Charlotte Mason approach, especially how to do art, music, geography, nature study, and history
  • Revise our homeschool daily schedule
