6/22/14 Weekly Meal Plan

Weekly Meal Plan Vacation Bible School begins this week at our church, which means from Sunday to Wednesday, our family has the opportunity to eat two dinners: dinner at home before church (because we usually eat around 6:00), followed by a late second dinner after VBS. Our church is great about feeding its members 🙂

I’ve also been blessed with an “abundance” of energy the past few days, which I’m hoping stays so I can make some freezer meals. With a little more than 2 months before our baby girl arrives, I am feeling a little anxious about all I still need to get done. Having some food in the freezer will help alleviate some of that stress.


Our garden has been producing a buku of squash and zucchini, and we are honestly tiring of it quickly. However, I’m planning to freeze some this week to use in squash casseroles and zucchini bread recipes later. I hope to share some of our favorite recipes soon. We’re also bringing in green beans, grape tomatoes, and cucumbers. So thankful for my husband who weeds it every weekend.

D: Hamburgers & homemade ice cream at church


B: Oatmeal & frozen blueberries

L: Grilled cheese sandwiches, chips, & strawberries

D: Chicken & Zucchini Quesadillas w/ Guacamole & Cilantro Lime Rice


B: Lemon Yogurt Sugar Mini Muffins, scrambled eggs, & fruit

L: Spaghetti & meat sauce (freezer) w/ cucumber slices & carrot sticks

D: Black Bean Flautas w/ Avocado Dipping Sauce


B: Cereal w/ fruit

L: Play date

D: Where’s the Squash Lasagna (double to freeze), Quick & Easy Garlic Parmesan Knots, salad


Homemade Salsa B: Chocolate-chip pancakes w/ sliced bananas

L: PB & J sandwiches, fruit, & chips

D: Baked Beef & Bean Chimichangas (double to freeze) w/ Homemade Salsa


B: Leftover pancakes, eggs, & fruit

L: Cheese quesadillas w/ cucumber slices, tomatoes, & fruit

D: Pepperoni Pizza


B: Cinnamon Coffee Cake, eggs, bacon, & fruit

L: Out

D: Cookout w/ friends from church

  1. Those chicken/zucchini quesadillas look very good! We went through the zucchini blues last year and we came up with a lot of different meals. Link is shared below and hope it helps (My husband planted 38 zucchini plants that year!!??!!!! so I had to get creative):

    • JES, thank you so much for the link and for your encouragement! I’m always looking for new ways to use up what we have. Right now we’re freezing it and throwing zucchini/squash into whatever we can find 🙂 But I will have to try your muffins and quiche recipes since I can freeze both for after-baby 🙂
