I can’t believe we’re already in June! The weather is definitely warming up here in Tennessee, so we’re venturing outside in the early morning hours to play and then coming in for school. This week kicks off our official “start” of the school year. Yes, I know most people are finishing up now, but we’ve had a 6-week long break, and we’re eager to get back in to our routine.
So, here’s what’s on our menu this week:
B: Cinnamon rolls (store-bought), sausage links & eggs
D: Pizza Bread
B: Chocolate-chip pancakes, eggs, & Homemade Yogurt
L: Bean & cheese quesadillas with carrot sticks & cucumbers
B: Eggs, Yogurt & sliced peaches
L: Grilled cheese sandwiches w/ chips & veggies
B: Pumpkin-Chocolate Chip Muffins, eggs, & fruit
L: Lunch out w/ friends
B: Muffins, yogurt, & fruit
B: Blueberry pancakes, eggs, & fruit
L: Chicken & black bean nachos
B: Leftover pancakes, eggs, & bacon
D: Dinner out
Needless to say, when life gets busy, I plan easy meals with minimal prep work, familiar recipes that I don’t have to think about, comfort foods to nourish our souls. Now is not the time to try new recipes or make elaborate meal plans. That’s why I am so glad to have my recipe binder full of family favorite meals.
My Kitchen Tip for this week:
Create your own family cook book. It’s essentially a 3-ring binder or Pinterest board of your family’s favorite recipes. All of our family favorites are copied and gathered into my homemaking notebook for easy access. When life is hectic and meal planning is overwhelming, I reach for my binder and pull out an old and faithful recipe that I know how to make and that I know my family will love.
