Spinach Strawberry Salad with Balsamic Vinaigrette

Spring has finally sprung here in Tennessee, and with all the daffodils blooming and everything turning green, I’ve been craving salads. The March produce has been bountiful (and cheap!), so I just had to share with you one of my favorite spring salads.

There’s just something about the combination of sweet (from the strawberries) and tangy (from the balsamic vinaigrette) that makes this salad so delicious. You can throw in whatever ingredients you have on hand, but here’s my favorite way to make the classic Spinach Strawberry Salad.

Spinach Strawberry Salad with Balsamic Vinaigrette

  • 6 cups fresh spinach, arugula, lettuce or any mixed greens
  • 1/2 cucumber, sliced
  • 1 pint strawberries, sliced
  • 1 pint grape tomatoes
  • 1/2 cup pecans, toasted
  • Blue cheese
  • Balsamic Vinaigrette (recipe to follow)

  1. In a large salad bowl, combine spinach, cucumber, strawberries and tomatoes.
  2. Sprinkle pecans and blue cheese on top.
  3. Serve with Balsamic Vinaigrette.

And while you can use store-bought, this homemade Balsamic Vinaigrette recipe is so simple and delicious that you will wonder why you haven’t made your own dressing before.

Balsamic Vinaigrette

Yield: About 1 cup

  • 2/3 cup olive oil
  • 3 tablespoons balsamic vinegar
  • 2 teaspoons lemon juice
  • 1 garlic clove, minced
  • 1 tablespoon fresh basil or 1/4 teaspoon dried basil
  • 1 teaspoon honey
  • 1/2 teaspoon spicy brown or stone ground mustard
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper

  1. Whisk together all ingredients in small bowl or combine in a glass jar and shake well.
  2. Adjust ingredients to taste.

Eating what’s in season is healthy, frugal, and good for the environment. Plus, it’s just delicious!

  4. Love the colors in this salad! I’m not a fan of salad dressing but I definitely love adding fresh fruit into my salads (strawberries and oranges are favorites!).

We still have a foot of snow on the ground in some spots in our yard – spring has not sprung in NH just yet. I cannot WAIT to get out in the garden!!!

Thanks for sharing, Keri! I hope you are doing well 🙂
