Roasted Broccoli Recipe: Kid-Approved, Quick & Easy || Growing in His

Recently, I posted on how we’re trying to incorporate more seasonal produce into our meal plans to improve our diet and save money. This month broccoli is on sale and in season, and at $0.99 a bunch, we’re consuming a lot of this green antioxidant-rich veggie in our house.

Most kids will eat broccoli smothered in cheese sauce {who am I kidding? I love the stuff, too!}, but it isn’t very healthy. In the past, I’ve roasted potatoes, corn, even carrots, peppers, and onions, and I love the sweetness that roasting brings out of vegetables. I thought, why not roast some broccoli? So I did and everyone is happy.

Here are some of the benefits of roasted broccoli:

  1. Healthier: Broccoli is a good source of Vitamins A, C, & K and rich with antioxidants
  2. Requires few ingredients
  3. Takes minimal prep work
  4. Cooks quickly
  5. Generally well-received, even by veggie-haters (& children)

Since broccoli is in season, I’m sharing our favorite way to fix it:

Roasted Broccoli

Roasted Broccoli: A Kid-Approved, Seasonal Recipe

Prep Time: 5 minutes

Cook Time: 20 minutes

Total Time: 25 minutes

Yield: 4 servings


  • 1 pound broccoli
  • 1 clove garlic, minced
  • 2-3 tablespoons olive oil
  • Juice of 1/2 a lemon (about 1/2-1 tablespoon)
  • Kosher salt
  • Freshly ground black pepper
  • Fresh Parmesan cheese (optional)


  1. Preheat oven to 400 degrees.
  2. Cut broccoli into florets and arrange on jelly roll pan (or any pan with sides).
  3. Add garlic, olive oil, lemon juice, salt, & pepper and toss to coat, making sure all of the broccoli is covered.
  4. Spread out in a single layer on pan.
  5. Roast for 15-20 minutes, until cooked through but still a little green (or cook longer for sweeter, crispier vegetables).
  6. Sprinkle fresh Parmesan on top.
  7. Serve immediately.

    • I told my oldest daughter Kate (age 5) that we were having roasted broccoli for supper, and she said, “Yuck, Mom.” to which I said, “You like it. You ate it up last week.” She said she didn’t remember that 🙂 So, SOME of my kids like roasted broccoli; one doesn’t claim to like any veggies although she will eat it. Kids. Some are just born contrarians.

  3. We eat lots of broccoli. Kenna loves the stuff, she’ll even eat it raw. I’ll roast on occasion but steaming is how we normally cook it. I have another head in the fridge so I might have to roast it this week!

  5. MMM! We love roasting veggies. Every now and then we have a “roasty meal” and toss all kinds of veggies in the oven and a whole chicken. Yum!
